Monday Night Dinner

This one is so easy and is created in one pot! I love this for Monday nights when everyone just wants to have dinner, do their homework and go to bed. The kids love it and it also makes a really good lunch for a couple of days after. You can always do gluten free pasta with this as well, just don’t cook it as long.

One pan sausage and spinach pasta:

1 lb turkey sausage (casings taken off and crumbled)

1 32 oz box of organic low sodium chicken broth

1 jar of sun dried tomatoes (julienne is best, then you don’t have to cut them like I did here)

1 16 oz box of whole grain penne pasta

1 bag of organic spinach

1/4 cup of cream (optional, you can use 1/2 and 1/2 or fat free)

salt and pepper to taste

Saute turkey sausage until browned and cooked through. When cooking sausage, always put the sausage in a cold pan and then turn on the heat (it won’t stick this way).

Add the uncooked pasta, sun dried tomatoes, cream and broth (do not stir). Cover and cook over medium heat for appx 17 minutes or until past is al dente and broth is absorbed. I promise it works!!

When the pasta is finished and the liquid has been absorbed, stir in the spinach until wilted then serve!

  1. Hi Dale,
    I have a similar recipe that starts with sautéing asparagus and chicken in a little olive oil, adding garlic and then chicken broth, then putting in a load of spinach and in a separate pan boiling bowtie pasta and at the end adding sundried tomatoes and pine nuts before serving. You are also supposed to melt in slowly parmesan cheese into the broth but it doesn’t always work so I just grate it on the top at the end.
    My version is more of a soup.
